Ingredients

  • 2 lbs Ground beef (80/20 formed into 4 1/2 pound patties

  • 2 Tsp Kosher salt

  • 1 Tsp Black pepper

  • 1 Tsp Garlic powder

  • 1 Tsp Onion powder

  • 1 Tbsp Worcestershire sauce (optional)

  • 1 1/2 lbs Baby potatoes, halved

  • 1 lb Baby carrots

  • 2 Medium yellow onions, sliced into thick wedges

  • 3 Tbsp Olive oil

  • 1 Tsp smoked or regular paprika

  • 1 Tsp dried thyme or rosemary

Directions

  • Preheat oven to 425 F. Line a large rimmed sheet pan with parchment or foil.
  • In a large bowl, toss potatoes, carrots, and onions with olive oil, salt, pepper, paprika, and thyme
  • Spread vegetables evenly on the sheet pan and roast uncovered for 25 minutes, flipping once halfway
  • While vegetables roast, gently mix ground beef with salt, pepper, garlic powder, onion powder, and Worcestershire. Form four patties and press a small indentation in the center of each
  • After 25 minutes, push vegetables to the sides of the pan and place patties in the center
  • Return pan to oven and cook 12-15 minutes flipping patties once, until burgers reach 160-165 F
  • Remove from oven and rest burgers for 5 minutes before serving
