- Pound out steaks between parchment paper thin but not too thin. Set aside.
- In food processor, add cottage cheese, pulse to begin creaming. Add spinach. Cream together. If using a bowl, chop spinach first, then add cottage cheese.
- Salt & pepper top side of steaks.
- Spread a thin layer of cottage cheese mixture on each steak.
- Cover with a sprinkling of bread crumbs and parmesan cheese.
- Roll up steaks and secure with either two toothpicks or string.
- Heat Dutch Oven on medium high heat. Add a drizzle of olive oil
- Sear both sides of steaks, set aside
- Add onions and garlic, cook until fragrant.
- Deglaze with wine, scrape the fond. Add tomatoes and spices. Bring up to a simmer.
- Return beef, cover and place in the oven for 2 hours.
- Remove toothpicks/string. Cover with sauce and serve with a topping over parmasen cheese. If you wish you can plate this on top of your favorite pasta.
Notes
- We recommend 1lb of pasta for 6 servings as the pasta ratio here should be less than normal.
