This is the easiest way to bring a taste of Italy to your kitchen. A very simple recipe that has all the essentials of the perfect Italian Soup

Ingredients

  • 1 lb Italian turkey sausage (sweet or hot)

  • 1 Heaping Cup of frozen or fresh sliced carrots

  • 1 lb Chopped potatoes, your choice of kind

  • 2 Tbsp Minced garlic

  • 3 Tbsp Arrow root or flour

  • 1 C Heavy cream

  • 3 C Fresh spinach

  • 1 Tsp Cayenne pepper

  • 1 Tsp Salt (taste throughout cook time to add more if necessary)

  • 4 Tbsp Butter (salted or unsalted)

  • 1 Medium sweet onion chopped

  • 1 Medium sweet pepper (your color choice) chopped

  • 1 Tbsp Worcestershire sauce

  • 5 C Chicken or vegetable broth

  • 1 Brick 8 oz room temperature cream cheese cubed

  • 1 Can (15.5oz) Great Northern Beans Drained

  • 1 Tsp Dried mustard

  • 1/2 Tsp Dried basil

  • 1/2 Tsp Italian seasoning

  • 1/2 Tsp Pepper (taste throughout cook time to add more if necessary)

  • 1 Tsp Parsley

Directions

  • In a dutch oven, add 2 tbsp butter, melt
  • Cook and crumble sausage, remove from pot with a slotted spoon leaving drippings
  • Add 2 Tbsp butter, stir until melted
  • Drop in onions, peppers, and carrots. Cook until fragrant
  • Add garlic, Worcestershire, and all spices
  • Add your thickener and stir until incorporated
  • Add broth, bring to a simmer
  • Add potatoes, beans and sausage, simmer until potatoes are done
  • Add cream, spinach and cream cheese
  • Stirring frequently, simmer until cream cheese is melted
  • Serve with a garnish of grated Parmesan Cheese
