Ingredients
1 lb Ground beef
1 Can Black beans favorite cooked beans drained with half the liquid
2 1/2 C Shredded cheese (Mexican)
Salt, pepper, minced garlic, oregano, cilantro, smoked pepper, chili powder to taste
1/2 Tbsp Beef tallow
1 Can Fire roasted tomotoes
1/2 Med Onion chopped
1 Avocado or neutral oil spray
Directions
- Brown the ground beef with salt, pepper and chili powder, set aside
- In the same pan, add beef tallow, cook on medium low until melted
- Add minced garlic, cook until fragrant
- Add beans, spices to taste and onion, cook on medium low until bubbly and onions are soft. Add salt and pepper last to bring desired levels.
- Smash to favorite consistency and add to beef mixture
- Combine both mixtures and set aside
- Cook tortillas as directed
- Assembly
- This Mexican Pie has 3 layers. The bottom layer is a cooked tortilla, then the beef and bean mixture, then 1/3 of the fire roasted tomatoes, then cheese. Repeat 2 more times. On the top add your favorite toppings.
- Bake for 20-25 minutes or until brown on top.
