Ingredients

  • 1 lb Ground beef

  • 1 Can Black beans favorite cooked beans drained with half the liquid

  • 2 1/2 C Shredded cheese (Mexican)

  • Salt, pepper, minced garlic, oregano, cilantro, smoked pepper, chili powder to taste

  • 1/2 Tbsp Beef tallow

  • 1 Can Fire roasted tomotoes

  • 1/2 Med Onion chopped

  • 1 Avocado or neutral oil spray

Directions

  • Brown the ground beef with salt, pepper and chili powder, set aside
  • In the same pan, add beef tallow, cook on medium low until melted
  • Add minced garlic, cook until fragrant
  • Add beans, spices to taste and onion, cook on medium low until bubbly and onions are soft. Add salt and pepper last to bring desired levels.
  • Smash to favorite consistency and add to beef mixture
  • Combine both mixtures and set aside
  • Cook tortillas as directed
  • Assembly
  • This Mexican Pie has 3 layers. The bottom layer is a cooked tortilla, then the beef and bean mixture, then 1/3 of the fire roasted tomatoes, then cheese. Repeat 2 more times. On the top add your favorite toppings.
  • Bake for 20-25 minutes or until brown on top.
