Ingredients

  • 2-4 Tbsp Olive oil

  • 2 Medium Sweet onions

  • 3/4 C Chopped carrots

  • 3 Tbsp Crushed Garlic

  • 40 oz Beef bone broth (or your favorite)

  • 8.5 oz Alouette caramelized onion spread room temperature

  • Salt to taste

  • 2 Tsp Oregano

  • 1 Tsp Crushed basil

  • 3 Tbsp Salted butter

  • 3 Medium Stalks celery chopped

  • 1 lb Turkey sausage

  • 48 oz Jar fully cooked Great Northern Beans drained

  • 1 C Heavy cream (or Half & Half)

  • 3 Tbsp Flour (or your favorite thickener)

  • 1/2 to 1 Tbsp White pepper (this recipe is heavy with pepper adjust to your taste)

  • 1 Tsp Sage

  • 1/2 Tbsp Sugar (optional)

Directions

  • in a 6 qt or larger Dutch oven, caramelize 1 and 1/2 onions sliced in olive oil . Chop the remaining onion half and set aside to add to the Mirepoix mixture. Set aside caramelized onions
  • Add more olive oil to pan and add Mirepoix (carrots, onions, celery) cook on medium until slightly softened, about 5 minutes
  • Add sausage and cook until slightly brown
  • Add butter and melt, then sprinkle in flour, cook through. Add spices
  • Add broth and cook on medium for about 15 minutes
  • Add cream and Alouette. Simmer on medium low until cheese in melted and soup is creamy smooth. Serve with your favorite toasted bread and enjoy
