Divine Cherry Clafoutis
Create a wonderful desert that is super easy and gives you an amazing custard center. This classic recipe is so versatile as you can use it with almost any fresh fruit.
- Cast Iron 9" Pie Pan
- 2 Cups freshly pitted cherries
- 1 Cup whole milk
- 1/2 Cup heavy cream
- 2 Large eggs
- 1/2 Cup sugar
- 1/2 Cup all purpose flour
- 1/4 Tsp salt
- 1 Tbsp powdered sugar for dusting
Pre-heat oven to 350 degrees F
Grease the pie pan
In a large bowl whisk together milk, cream, eggs, sugar, flour salt and extract until smooth
Pour a 1/4" of the batter into the pie pan, bake for 10 minutes or until a thin skin forms on the top
Arrange cherries on the bottom, pour batter over cherries and redistribute evenly.
Bake 40-50 minutes until puffed and golden brown. Center should be set, but still jiggly.
Cool 10-15 minutes dust with powdered sugar, serve.
If you want a custard center, then serve after about 5 minutes of cooling. Otherwise, the custard sets up and your Clafoutis will be set enough to slice in a perfect shape.
