Ingredients
12 Eggs
1/2 Medium onion
1/4 C Chopped sweet peppers
1/2 C Well drained crushed pineapple
1/2 Tsp Pepper or to taste
1 Tsp Smoked paprika or to taste
1 C Cottage cheese (or your choice)
1 Rib celery
1 1/2 Tbsp Dijon mustard or to taste
1 1/2 Tsp Salt or to taste
1 Tsp Garlic powder
Directions
- Hard boil eggs
- Place one cup of cottage cheese into a strainer for 15 minutes to drain excess liquid
- Put eggs in an ice bath to cool. Peel and slice them in half
- Chop or smash eggs
- Add in cottage cheese
- Add chopped onions, celery and sweet peppers
- Add Dijon Mustard
- Add the crushed pineapple
- Add salt, pepper and spices
- Mix to incorporate ingredients well
- Refrigerate for 1 hour and enjoy
