Ingredients

  • 12 Eggs

  • 1/2 Medium onion

  • 1/4 C Chopped sweet peppers

  • 1/2 C Well drained crushed pineapple

  • 1/2 Tsp Pepper or to taste

  • 1 Tsp Smoked paprika or to taste

  • 1 C Cottage cheese (or your choice)

  • 1 Rib celery

  • 1 1/2 Tbsp Dijon mustard or to taste

  • 1 1/2 Tsp Salt or to taste

  • 1 Tsp Garlic powder

Directions

  • Hard boil eggs
  • Place one cup of cottage cheese into a strainer for 15 minutes to drain excess liquid
  • Put eggs in an ice bath to cool. Peel and slice them in half
  • Chop or smash eggs
  • Add in cottage cheese
  • Add chopped onions, celery and sweet peppers
  • Add Dijon Mustard
  • Add the crushed pineapple
  • Add salt, pepper and spices
  • Mix to incorporate ingredients well
  • Refrigerate for 1 hour and enjoy
