Braciole For Beginners: How To Make The Best Steak Braciole

Ingredients
2 lbs Thin sliced chuck or round steaks
1/2 C Parmesan Cheese
1 C Fresh spinach
3 Cloves of garlic
1/2 Tsp Basil
1/2 Tsp Oregano
1 C Red wine (alternatively, beef broth)
2-3 Tbsp Olive oil
1 28 oz Can of San Marzano Tomatoes
3/4 C Room temperature cottage cheese
1/4 C Bread crumbs
1 Medium Chopped onion
1/2 Tsp Thyme
1/2 Tsp Parsley
Salt and pepper to taste
Directions
- Pound out steaks between parchment paper thin but not too thin. Set aside
- In food processor, add cottage cheese, pulse to begin creaming. Add spinach. Cream together. If using a bowl, chop spinach first, then add cottage cheese
- Salt & pepper top side of steaks
- Spread a thin layer of cottage cheese mixture on each steak
- Cover with a sprinkling of bread crumbs and parmesan cheese
- Roll up steaks and secure with either two toothpicks or string
- Heat Dutch oven on medium high heat. Add a drizzle of olive oil
- Sear both sides of steaks, set aside
- Add onions and garlic, cook until fragrant
- Deglaze with wine, scrape the fond. Add tomatoes and spices. Bring up to a simmer
- Return beef, cover and place in the oven for 2 hours
- Remove toothpicks/string. Cover with sauce and serve with a topping over Parmasen cheese. If you wish you can plate this on top of your favorite pasta
