Creamy white bean and turkey sausage soup with caramelized onions.

- in a 6 qt or larger Dutch oven, caramelize 1 and 1/2 onions sliced in olive oil . Chop the remaining onion half and set aside to add to the Mirepoix mixture. Set aside caramelized onions.
- Add more olive oil to pan and add Mirepoix (carrots, onions, celery) cook on medium until slightly softened, about 5 minutes
- Add sausage and cook until slightly brown
- Add butter and melt, then sprinkle in flour, cook through. Add spices.
- Add broth and cook on medium for about 15 minutes
- Add cream and Alouette. Simmer on medium low until cheese in melted and soup is creamy smooth. Serve with your favorite toasted bread and enjoy.
Get a good caramelization on these onions. This really brings out the flavor of the soup.
